Caribbean BBQ Chicken

Serves 4

Ingredients

  1. 4 chicken legs

  2. 1 Tbsp kosher salt

  3. 1 Tbsp dried thyme

  4. 1/2 tsp ground allspice

  5. 1 tsp crushed red pepper flakes

  6. 1/2 tsp garlic powder

  7. 1/4 tsp ground cloves

  8. 1/8 tsp dry mustard

  9. 1 Tbsp olive oil

  10. 1/2 cup your favourite BBQ sauce

Method

  1. Mix your spices and season the chicken legs all over.

  2. Preheat oven to 375F.

  3. Heat oil in a sauté pan with a lid or a dutch oven over HI heat. Place chicken legs in pan, skin side down.

  4. Brown the chicken all over, flipping and turning and moving around the pan until it’s as brown as can be. This will take about 5-10 minutes.

  5. Put the lid on the pan and place in the oven for about 30 minutes or until the legs bend easily.

  6. Remove from the oven and place back on the burner at HI heat. The sauce will likely need to thicken, since the juices from the chicken have run into the pan. Reduce the sauce until it coats the chicken.

  7. Serve hot with rice and peas and coleslaw!
