Apple Pecan Bundt Cake

Ingredients
1 cup unsalted butter, softened
2/3 cup brown sugar
1 1/3 cups granulated sugar
4 eggs, room temperature
4 tsp vanilla extract
3 cups AP flour
4 tsp baking powder
1 cup whole milk, room temperature
Apple filling
4 medium apples, diced
2 tsp ground cinnamon
2 Tbsp granulated sugar
Glaze
1 cup powdered sugar
1 Tbsp whole milk
Method
Preheat oven to 350F.
Add butter to a stand mixer on LO. Add sugars and mix to combine, scraping down the sides and mixing again.
Add eggs, one at a time, add vanilla extract.
Add flour and baking powder, scraping down the sides and bottom of the bowl and mixing again.
Add milk slowly, scraping down the sides and mixing again. Don’t over mix! Fold in pecans.
Butter and flour a bundt pan. Make the apple filling by mixing apples, sugar and cinnamon in a medium bowl.
Add 1/3 batter to bundt pan and spread evenly. Add 1/3 apples and spread evenly, pushing down slightly. Repeat this step 3 times, finishing with the third addition of apples on top.
Bake for 45-50 minutes, until the middle is firm and the top is golden brown.
Cool the cake on a lined sheet pan with a metal rack. Make the glaze by combining the icing sugar and remaining milk with a whisk.
When the cake has completely cooled, pour the icing over the top.
