Pumpkin Apple Muffins with Pepita Streusel

Serves 12

Ingredients

  1. 2 cups AP flour

  2. 1/2 cup granulated sugar

  3. 1/4 cup golden yellow sugar

  4. 1 Tbsp baking powder

  5. 1 tsp ground cinnamon

  6. 1/2 tsp ground ginger

  7. 1/8 tsp ground nutmeg

  8. 3/4 cup whole milk (3.25%), room temperature

  9. splash of pure vanilla extract

  10. 1/2 cup melted unsalted butter, cooled

  11. 2 large eggs, room temperature

  12. 1 cup pure pumpkin

  13. 1 medium apple, grated (I used Honeycrisp)

Streusel Topping (optional):

Ingredients

  1. 1/2 cup AP flour

  2. 1/4 cup brown sugar

  3. 3 Tbsp raw pepitas

  4. 1/4 tsp salt

  5. 3 Tbsp unsalted butter

Method

  1. Preheat oven to 350F.

  2. Mix flour, sugars, baking powder and spices in a large bowl.

  3. Mix milk, vanilla, butter, mashed pumpkin and eggs in a medium bowl.

  4. Whisk wet ingredients into dry ingredients until almost completely mixed.

  5. Fold apple into batter, careful not to over mix.

  6. Make the streusel: add ingredients to a mini chopper or food processor and pulse until crumbly.

  7. Line a muffin tin, scoop batter by the 1/4 cup full into the pan.

  8. Top muffins with streusel. Place in preheated oven.

  9. Bake for 22 minutes, remove from oven and place on rack to cool.
