Maple Dijon Salmon with Crispy Skin

Ingredients
4 salmon filets, skin intact
1 Tbsp Dijon mustard
1/4 cup maple syrup
1/2 tsp fresh thyme
1/2 tsp fresh rosemary
1/4 tsp kosher salt, divided
1/4 tsp black pepper, divided
2 Tbsp olive oil, divided
Method
Preheat oven to 450F.
Make the glaze: add dijon, maple syrup, half the olive oil, thyme, rosemary and half the salt and pepper to a small bowl and whisk until emulsified.
Season salmon filets on both sides with salt and pepper. Heat a cast iron skillet with remaining olive oil over high heat. When the oil starts to smoke, add filets to pan and cook for 5 minutes.
Turn off the stovetop. Spoon the glaze over top of the filets and place the pan in the top rack of the preheated oven.
Cook for 12 minutes, basting the filets with the sauce from the pan halfway through.
Serve hot with rice and stir-fried veggies!
